Odia Vegetable Besara Ingredients

Vegetable Besara is a reliable and traditional Odisha recipe, cooked in mustard paste with mixed vegetables. It is one of the 56 blessings offered as Mahaprasad at Puri Sri Jagannath Temple in Odisha

Besara Ingredients

Soaked Bengal gram(whole)- 50 gms
Bengal gram dal- 10 gms
Radish- 2-3
Elephant yam- 300gms
Wax gourd- 150gms
Pumpkin- 200gms
Sweet potatoes- 150gms
Broad bean- 100gms
Leutia Saga (ref Glos)- 1 bunch
Ginger- 2″ piece

Grated coconut- 1/2 cup
Black mustard seeds- 20 gms
Ani seeds- 10 gms
Turmeric powder- 1 tsp
Salt- to taste
Nadi- 50 gms
Asafoetida- a pinch
Sugar or Jaggery- 2 tsp
Ghee- 3 tbs
Panch Phutan

Besara Method

  1. Cut the vegetables into 1″ sized cubes. Chop the leaves. Grind mustard and Ani seeds, peppercorns, and Bengal gram dal to a paste.
  2. Boil the soaked gram in sufficient water till half cooked. 
  3. Add all the vegetables, crushed ginger, turmeric powder and salt. 
  4. When the vegetables, are half cooked, add the masala paste.
  5. Then add nadi, grated coconut and sugar. 
  6. When the water is absorbed, add 2 tbsp ghee and asafoetida. Stir, remove from fire, and temper with 1tbs ghee and Phutan.
