Dalma Recipe

Dalma is a wholesome preparation which combines the elements of curry and dal. It is an easy-to-prepare item that is popular among rich and poor in Odia families.

Dalma Ingredients

Red Gram Dal / green gram Dal – 500 mg
Elephant Yam- 100gms
Pumpkin- 100gms
Brinjal- 100gms
Vegetables like broad bean, wax ground, Kankad- 200gms
Green banana-2
Ginger- 50 gms
Grated coconut – 1 cup
Cumins- 4 tsp
Coriander seeds- 3 tsp
Fenugreek Seeds- 1/2 tsp
Peppercorn- 1 tsp
Cloves- 4-5
Cinnamon- 1 piece
Black cardamom- 2
Bay leaves- 2
Turmeric powder- 1/2 tsp
Salt- to taste
Sugar- 2 tsp
Ghee- 3 tbsp
Asafoetida- 1/4 tsp

Odia Dalma Method

  1. Cut the vegetables into equal sizes. 
  2. Dry roast coriander seeds, 3 tsp cumin, cumin, fenugreek peppercorns, cloves, cinnamon and cardamom seeds.
  3. Make a fine powder, Crush ginger and keep it aside.
  4. Boil the dal with bay leaves, salt and turmeric powder. 
  5. When the lentil is half cooked, add vegetables and crushed ginger. 
  6. After the vegetables are cooked, add the coconut, asfoetida, sugar and 2 tbsp.
  7. Simmer for 2 minutes; remove from fire when it is semi-thick. Add powdered spices and stir.
  8. Temper with 1 tbsp ghee and 1 tsp cumin.
  9. Fresh coriander leaves add to the flavour.
