Mahura is one of the most delicious foods in Odisha. This Mahura is offered as Prasad to Lord Jagannath of Odisha. Mahura is one of the 56 Bhog of Lord Jagannath.
Mahura Ingredients
Soaked Bengal gram(whole)- 25 gms Elephant yam- 300 gms Green banana- 2 nos Brinjal- 200 gms Pumpkin- 200 gms Kankad or Wax gourd- 200 gms Sweet potatoes- 200 gms Colocasia- 100 gms Ginger- 2 piece Grated coconut- 1 cup Sugar- 20 gms Nadi- 100 gms Salt- to taste
The banana, pumpkin and brinjals should be cut into bigger sizes since it takes less time to cook. Grind cumin, peppercorn, and Ani seeds and corianders to a smooth paste.
Make a powder out of cinnamon, cloves, and cardamom.
Boil 4 cups of water and add soaked gram, vegetables, crushed ginger, turmeric powder and salt.
After the vegetables are half cooked, add the masala paste.
After a while add the coconut, sugar and pulses.
Allow to simmer till the water is absorbed.
Then add 2 tbs ghee, and spice powder and stir to mix.
Remove from fire, and temper with 1 tbs ghee and phutan.
